Preservation of Traditional Garifuna Techniques through Enhancement of the Luba Ereba Cassava Facility
This project focuses on women empowerment and creation of economic opportunities for the women of Barranco Village by preserving the traditional art of cassava bread baking and incorporating new technology to increase production for the local, regional, and international market. Cassava, or Ereba in Garifuna, is one of the staple foods of the Garifuna people. Traditionally, the making of Ereba is labor intensive, and is typically a 2-day process. Commencing with the harvesting the tuber, to washing, peeling, grating, straining (usually an overnight process), sieving, and then baking. Devices have been created to simplify the grating and straining process and as a result, the process from harvesting to baking can now be done in a matter of hours, thus leading to the production of more Ereba in one baking.
The project will be implemented with various activities and sub-activities as follows:
Activity 1 - Training sessions to preserve and teach Ereba making
Cassava bread making (from harvesting to baking)
Climate Smart Agricultural practices
Marketing and packaging of products for sale
Advocacy for food sovereignty for Garifuna people
Exchange visits and knowledge Sharing
Activity 2 ? Creation of a certified and safe processing facility
Enhancing the current building
Purchasing of updated equipment
Training for basic repairs and maintenance to equipment
Activity 3 ? Land Preparation and Replanting
Sourcing Cassava tubers for replanting
Weeding
Reaping
